Digital Ocean has a tutorial for CentOS6, but not CentOS 7. Anyone know of a good tutorial?

You should be able to isntall ejabberd using the binary installer from the project which can be found here:

http://www.process-one.net/downloads/downloads-action.php?file=/ejabberd/14.12/ejabberd-14.12-linux-x86_64-installer.run

The documentation here would then help you to configure it using the settings in the CentOS 5/6 tutorial.
