We generally don’t recommend sending email from your Droplets:
https://www.digitalocean.com/community/tutorials/why-you-may-not-want-to-run-your-own-mail-server
But to answer your question, it depends on your OS and what type of mail application you’re setting up. For example, on Ubuntu you have these options: https://help.ubuntu.com/lts/serverguide/email-services.html
