This really depends on the websites, the number of plugins, the size of the sites, the time of the traffic and a lot of other variables.
Let’s say that you have 100 sites * 200 visits, this would mean that you would get ~20000 hits per day, if you get the this traffic spread out through out the day it means that you would only get 13 hits per minute which is nothing and you could handle it with a couple GB RAM and a couple of CPUs. But if you get this traffic in spikes then you would need more resources.
You just need to make sure that you have a good monitoring system and that you scale up your server whenever you see that the resources utilization is spiking up.
Long story short, start small and scale up.
