Starting with a new droplet or redeploying your droplet may be the easier solution here.
You can also go and uninstall Plesk and then install FastPanel but this may lead to some issues due to the fact some packages/services may not work as expected after Plesk is removed. However, this is definitely something you can try.
After Plesk uninstallation, some system services may stop working due to their close integration with Plesk. Before removing Plesk for Linux, it is recommended to create a server snapshot to have a system restore point.
Note: Due to a Plesk Installer bug with ID PI-498, it is not possible to remove Plesk installed on Debian/Ubuntu-based distributions:
As a workaround, it is recommended to redeploy a server from scratch.
To remove Plesk from CentOS/RHEL-based distributions, follow these steps:
Connect to a Plesk server via SSH
Run the following command to remove Plesk and all its components:

Please remember to follow all backup and migration practices to ensure no data loss, as the availability or effectiveness of data migration tools can vary between different control panels.
Also, do keep in mind that any custom settings or configurations made in Plesk will not be migrated over to FastPanel and will need to be manually reconfigured.

You’ll need to rebuild your Droplet from the ground as it’s quite hard to replace one panel with another otherwise.
Luckily, DigitalOcean offer the Rebuild option:

Rebuilding a Droplet wipes the Droplet’s disk and replaces it with an image you select. This is an option if you’re concerned that your Droplet has been compromised, you’ve lost access to it, you’d like to switch operating system versions, or you’d like to completely replace the contents of a Droplet.
