I installed jitsi on a server with nginx and set it up to use a subdomain. I have the .conf file (generated by the jitsi install) under /etc/nginx/sites-available and a link in sites-enabled pointed to the subdomain. I found an article that said I needed to create an “A” record (not sure I did that correctly) so I created one using the subdomain.domain.com and the IP address.
