the server have a crazy big ping when start at midnight (00:00AM (Server time)) and the ping will be normal again when at 20:00 - 00.00 (Server time). Its keep that repeatly everyday. What I could suggest here is to SSH to your server whenever you notice poor performance and check the running processes and the resource utilization, maybe you get more users during this period of time and the load on the server increases.

This sounds like some high load for me. The best possible way to go forward is to enter your Droplet at the time you are getting these issues and try to debug what’s going on.
You can try tools such as top, htop and so on to determine the source of the issue.
One other question, is it by change 20:00 - 00.00 the most used time of the day? There might be reason to believe that could be the cause of it.
