When I use the console access everything is fine for awhile but then I will be typing something like alligator clips and my vnc will randomly freeze upon typing some of the letters. I cycle my server and it works fine but it keeps freezing up on me and I was wondering if there was anything I could do to make the server usable?

The remote console is there so you can access your droplet in case you get locked out or if you can’t SSH to it.
If you need to access a desktop environment, consider installing a VNC server on your droplet: How To Setup VNC For Ubuntu 12.
If you just need to log in to your droplet’s shell, you should use SSH instead. See Step Seven of How To Create Your First DigitalOcean Droplet Virtual Server.
