I have seen a couple of tutorials, but they seem to be years outdated. Running a droplet on NGINX and Apache2 and can’t seem to parse PHP in HTML files. Does anyone happen to have a known working solution?

You’ll need to tell Apache to parse HTML files as PHP in order for that to work. You can achieve this using an .htaccess file in your website’s root directory. In the .htaccess file you’ll need to add the following type
AddType application/x-httpd-php .htm .html
This should actually do the trick for you.
