Tenho um site de noticias hospedado em um servidor que não está atendendo a demanda, o site possui muitas imagens e noticias diárias, tendo mais de 30 mil visitas nas paginas por mês, e já chegou até 5 mil acessos simultâneos. Para atender essas demandas, qual a melhor hospedagem e suas configurações ?

This is really hard to pinpoint. The size of the droplet you need usually really depends on the website you have, how well it’s optimized, how many resources it’s loading on opening it, how heavy it is on the droplet and stuff like that.
Having said that, from what you’ve mentioned, I’ll recommend a bigger Droplet than the smallest. Maybe you can start with the large one which has the following resources - s-6vcpu-16gb and take it from there when you need to upgrade it. Please note that even this droplet could be not enough and you’ll need to upgrade it
As for the configuration, I’ll recommend using Nginx.
