I have an Ubuntu installation on a droplet. I was hoping to use the Cron tab to kick off a SQL query I’ve written to query a remote database (hosted by HostGator) table of mine. Is this possible?

If HostGator allows remote database connections, yes. If they do not allow remote connections, and most shared providers do not, then it wouldn’t be possible as the connection attempt would fail.
You’d need to get in touch with HostGators’ support team and see if they allow remote connections.
