My application is using MongoDB, since January 2017, some of the tables from my production database are getting deleted ever so often. I have to recreate the droplet from the saved image and end up losing production data. Please could you provide me with steps to take to fix this.

It’d be hard to troubleshoot without knowing more about your setup, specifically:
1). How did you setup your server? Did you use a guide – if so, which one?
2). Have you checked your logs to see if there’s anything causing the loss of data?
3). Was your web server properly secured?
Database Servers generally don’t randomly lose data without reason and #3 is a big one.
