I am following how to install polymer over on their website here:

When I get to the step to run this cmd:
bower init
I get this:
mike@Beer-Portfolio:~$ bower init
/usr/bin/env: node: No such file or directory
mike@Beer-Portfolio:~$

How did you install Bower? It requires Node.js to be installed. For a guide on installing it, see:
If you installed Node.js from the Ubuntu repositories, it installs a nodejs binary but many programs, including Bower, expect it to be named simply node You can create a symlink between the two in order to allow Bower to find it:
sudo ln -s /usr/bin/nodejs /usr/local/bin/node
