I am new to digital ocean so not sure what droplet i should use for hosting a decent sized mc server/website should i use Standard Droplets or CPU Optimized Droplets ?.

I would suggest checking the server requirements for the specific game that you are trying to run. After that, you can upgrade your droplet at any time in case your traffic grows and you need more resources.
