I would like to be able to track what my Cloud Firewalls have blocked/allowed, where Load Balancers send traffic, and how DNS is being utilized.
What logging features are available for those?

Hi! Currently the logging options are limited, according to the published documentation. For DNS and Firewalls, logs are not available.
For Load Balancers, DO LBs do support the “PROXY protocol” which will forward some information to your resources which would allow you to capture as logs:
