I hosting on AWS (Elastic Beanstalk) with a managed postgres db on DO. For the trusted sources I have used an instance on an ec2 server, but I believe these can change. For now i can connect to the db, but i worry that this wont last - is there a way of ensuring the AWS hosted site is always a trusted source?

Maybe you could assign a static source IP address for your instances in your Elastic Beanstalk environment. That way the outbound traffic would always be coming from this static IP and it would not change:
