Can I edit the public key I posted in for my droplet?

You mean you would like to replace it with another one ? Yes, you can. To do that follow this tutorial: https://www.digitalocean.com/docs/droplets/resources/lost-ssh-key/
If you would like to upload a new ssh-key to your droplet in case you’ve deleted it from your other machine, you can follow the tutorial that Yannek posted:
https://www.digitalocean.com/docs/droplets/resources/lost-ssh-key/
If you would like to create a new public key for your droplet in order to access other machines/servers (in case you’re using the droplet as a jump box), you can simply use the ssh-keygen to generate a new pair of keys for your droplet which you can then upload to your other droplets.
Regards, Alex
