Is there any way in which I can setup my email receiving server on srv.mywebsite.com and then add an email address me@mywebsite.com but instead of receiving emails and storing them, just forward them to me@myemailprovider.com?

simply done:
edit /etc/alias
add the following line at the bottom:
me me@myemailprovider.com
restart postfix.
