I initiated the Snapshot process about 2 hours ago and I could see the execution time as “Action did not complete” in the Droplet History section. Is there any way I can go and check how much time left to complete the process??

Unfortunately, there is no progress indicator for the snapshotting process. Generally it should only take a few minutes, though it depends on the size of the droplet and the amount of data. It can take up to an hour in certain circumstances. It sounds like there might have been a problem with taking the snapshot. Could you please file a support ticket so that the team can investigate more closely?
