Hello, I currently have a site on a server running Ubuntu 14.04 on a specific droplet. I created another droplet using Ubuntu 18.04. Everything is already configured and running. But how do I perform this transition from one server to another concerning Let’s Encrypt? Should I just install certbot in the new server and run it normally?

Yes, installing certbot on the new server and running it as normal is going to work. The main downside is that you would need to first point your domain name to the new server in order for this to work.
Another way to do this is to copy your Let’s Encrypt SSL files from the old server to the new server and edit your virtual host on the new server so that it matches the old one. The downside of this approach is that it would be a manual process and would be more time-consuming.
