I have a program done in C # , which is a socket server with GUI. I’d like to run it via wine , without a GUI . How can I do this?

Any GUI program running on Linux whether via Wine or directly is going to likely refuse to run if an X server is not found. It is possible to get around this with a headless X server like xvfb and that is what I would recommend looking into.
