I have an existing application in a git repository. I used to have a droplet with the previous version of the one click rails app (rails 5.0.1) and a default app was placed in /project , but in this new version of the one click rails app droplet, I don’t know where to put it.

This will usually depend from the project itself.
A lot of web-servers like Apache will come with structure for the virtual host like /var/www/your_domain where the project files will go. This is considered the root directory of your site/application.
Then in the domain folder you can have the projects files like css, JavaScript, config files, includes and etc.
