I’m struggling with a Wordpress website on my Droplet - my /var/www/html folder is empty when I SFTP with a client.
The website is fine and loading as normal…What am I doing wrong? Where are the files?!

Check if its still empty if you ssh into it. Maybe your stfp user doesn’t have the right read permissions.
