I just set up three Basic Droplets for use with k8s. For my use case, the droplets must be running on Intel CPUs. cat proc/cpuinfo inside the droplets reveals that they are running on Intel at the moment. Is this likely to change at any time in the future?

I believe that as of the time being all Droplets use Intel. For more information, you can check the pricing page here:

However, I don’t think that there is any official information on whether or not there are any plans for this to be changed.
