I was wondering if it is possible to setup a email client on a droplet, that works like Thunderbird or outlook but online. So you can log into the online email client through a browser and have access to all your emails?

If you want to access your emails using a browser you can simply deploy a webmail client like Roundcube. You can check our tutorial on How To Install Your Own Webmail Client with Roundcube on Ubuntu
The tutorial covers the installation process for an older Ubuntu version but can complete the initial LAMP setup using the 20.04 tutorial and then simply follow the steps for the Roundcube configuration.
You can also use VNC to interact with a graphical desktop environment on your droplet and then install a mail client, although running a webmail client will be the better option for me.
