I’ve been wondering which one should I use. Obviously, HTTP 2.0 is newer but I’m not sure if it’s the norm now?

HTTP 2.0 or above is what you should be aiming at. I’ve searched/read different topics on the matter and it seems that HTTP2 is both by number of websites and traffic more than HTTP 1.1 and even HTTP 3.
HTTP/2 (or above) is the norm both by number of websites, and traffic (so skewed towards popular sites that are used more).
HTTP/2 enables full request and response multiplexing. In practice, this means a connection made to a web server from your browser can be used to send multiple requests and receive multiple responses. This gets rid of a lot of the additional time that it takes to establish a new connection for each request.
Basically, it will help you even with your website’s speed if you will.
