I would recommend starting with the following tutorial on how to choose the correct server for your needs:

Usually, I personally start with a smaller server, then deploy my application to that server and run some load tests:
https://www.digitalocean.com/community/tutorials/an-introduction-to-load-testing
That way I can find the limits and the bottle necks of my application and scale up as needed.
